1 pound large shrimp, peeled and deveined

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup dry white wine

1 cup heavy cream

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Orzo: Bring a large pot of salted water to a boil. Add orzo and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent. Add minced garlic and sauté for an additional minute, until fragrant.

      Cook the Shrimp: Add the shrimp to the skillet and season with salt, black pepper, and Italian seasoning. Cook for about 3-4 minutes until shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Prepare the Sauce: In the same skillet, pour in the white wine and bring it to a simmer. Allow it to simmer for 3-4 minutes, reducing slightly. Stir in the heavy cream and bring the mixture to a gentle simmer.

          Combine Ingredients: Add the halved cherry tomatoes and cooked orzo to the skillet, stirring well to combine. Let the mixture simmer for 2-3 minutes, allowing the tomatoes to soften.

            Finish the Dish: Return the cooked shrimp to the skillet. Stir in the grated Parmesan cheese, and mix until melted and combined. Adjust the seasoning with more salt and pepper to taste.

              Serve: Garnish with fresh parsley and serve hot with lemon wedges on the side for an extra burst of flavor.
