1 lb shrimp, peeled and deveined

1 cup sushi rice

1 1/2 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 ripe avocado, sliced

1 cup diced pineapple

1 small cucumber, thinly sliced

1/4 cup green onions, chopped

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon lime juice

1 teaspoon sriracha (optional)

Sesame seeds for garnish

Seaweed salad (optional)

Instructions
 

Start by cooking the sushi rice: rinse the sushi rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and water, and bring it to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for another 10 minutes.

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. After the rice has rested, fluff it with a fork and gently fold in the vinegar mixture. Set aside to cool.

      While the rice is cooling, prepare the shrimp: in a medium bowl, toss the shrimp with soy sauce, sesame oil, lime juice, and sriracha (if using). Let it marinate for about 10-15 minutes.

        In a skillet over medium-high heat, cook the marinated shrimp for about 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and let cool for a moment.

          To assemble the poke bowl, place a scoop of the seasoned sushi rice in the center of a bowl. Top with the cooked shrimp, avocado slices, diced pineapple, sliced cucumber, and chopped green onions.

            For added flavor, drizzle extra sesame oil over the top and sprinkle with sesame seeds. If desired, serve with a side of seaweed salad.
