10 fresh shrimp, peeled and deveined

8 rice paper wrappers

1 cup vermicelli rice noodles

1 cup mixed vegetables (carrots, cucumber, bell pepper, julienned)

1 cup fresh herbs (mint, cilantro, basil)

1 ripe avocado, sliced

1 tablespoon lime juice

Cook the Shrimp: Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and set aside to cool. Once cooled, slice the shrimp in half lengthwise.

    Prepare Rice Noodles: In a separate pot, boil water and cook the vermicelli noodles according to package instructions, usually about 3-5 minutes. Drain and rinse under cold water to stop cooking.

      Set Up Rolling Station: Fill a large shallow dish with warm water. Lay out your rice paper wrappers and prepare your filling ingredients.
