2 cups dried navy beans (or pinto beans), soaked overnight and drained

4 cups vegetable broth

1 medium onion, finely chopped

2 cloves garlic, minced

1/4 cup maple syrup

1/4 cup ketchup

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 bay leaf

2 strips of cooked bacon, chopped (optional, for added flavor)

Preheat the Oven: Preheat your oven to 325°F (165°C).

    Prepare the Beans: In a large pot, combine the soaked and drained navy beans with vegetable broth. Bring to a boil over medium-high heat.

      Simmer: Once boiling, reduce the heat and simmer for about 1 hour, or until the beans are tender but not mushy. Drain and set aside.

        Sauté the Aromatics: In a large oven-safe pot or Dutch oven, add a drizzle of olive oil and sauté the chopped onion over medium heat until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

          Combine Ingredients: Stir in the maple syrup, ketchup, Dijon mustard, apple cider vinegar, smoked paprika, black pepper, salt, and the bay leaf. Mix until well combined.

            Add Beans: Fold the cooked beans into the mixture and add the chopped bacon if using, ensuring they are coated with the sauce.

              Bake: Cover the pot with a lid or foil and transfer it to the preheated oven. Bake for 1.5 to 2 hours, stirring occasionally. If the mixture becomes too thick, you can add a splash of water or broth.

                Final Touch: Remove the lid during the last 30 minutes of baking to allow the top to caramelize and develop a slightly crispy texture.

                  Serve: Once cooked, discard the bay leaf and serve hot as a side dish.
