1 cup rolled oats

1/2 cup nut butter (peanut, almond, or cashew)

1/4 cup honey or maple syrup

1/2 cup protein powder (vanilla flavor recommended)

1/4 cup mini dark chocolate chips (or dried fruit for a healthier option)

1 tablespoon chia seeds

1/4 cup desiccated coconut (unsweetened)

Pinch of salt

In a large mixing bowl, combine rolled oats, protein powder, chia seeds, and salt. Stir together until well mixed.

    In a separate bowl, mix together the nut butter and honey (or maple syrup) until smooth and creamy. This may require some gentle heating if the nut butter is too thick.

      Pour the nut butter mixture into the dry ingredients and mix until combined. Use a spatula or your hands for better incorporation.

        Fold in the mini chocolate chips (or dried fruit) and desiccated coconut until evenly distributed throughout the mixture.

          Once fully mixed, take small portions of the mixture (about 1 tablespoon each) and roll them into balls. You should have approximately 20 energy balls.

            Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
