Ingredients

4 chicken thighs, bone-in and skin-on

1 cup buttermilk

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to spice preference)

Salt and pepper, to taste

¾ cup all-purpose flour

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (or more for extra heat)

1 tablespoon honey

2 tablespoons green onions, chopped (for garnish)

Fresh cilantro leaves, for garnish

Instructions

Marinate the Chicken: In a large bowl, mix the buttermilk, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 1 hour (or up to overnight for deeper flavor).

Prepare the Breading: In a shallow dish, add the flour. Remove the marinated chicken from the buttermilk, shaking off excess, and dredge each thigh in flour. Ensure an even coating and set aside on a plate.

Make the Bang Bang Sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey. Adjust the sriracha to suit your spice preference and set aside.

Cook the Chicken: Heat a large cast-iron skillet or heavy pan over medium-high heat and add about 2 tablespoons of oil. Once hot, add the chicken thighs, skin side down. Cook for about 7-8 minutes until the skin is crispy and golden. Flip the chicken and cook for an additional 6-7 minutes, or until the internal temperature reaches 165°F (75°C).

Coat the Chicken: Once the chicken is cooked, remove it from the heat and let it rest for a couple of minutes. Drizzle or brush the Bang Bang sauce all over the chicken thighs, ensuring they're nicely coated.

Serve: Transfer the chicken thighs to a serving platter. Garnish with chopped green onions and fresh cilantro leaves.
