12 oz refrigerated cheese ravioli

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, diced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 teaspoon dried Italian herbs

Salt and pepper to taste

2 cups fresh spinach

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the diced onion and bell pepper; sauté until the onion becomes translucent, about 3-4 minutes.

      Stir in the minced garlic and zucchini, cooking for another 2-3 minutes until the zucchini is slightly tender.

        Add the cherry tomatoes and Italian herbs to the skillet, stirring well, and cook for an additional 2 minutes.

          Gently add the refrigerated ravioli to the skillet, followed by 1 cup of water (or vegetable broth for more flavor).

            Cover the skillet and let it simmer for about 5-7 minutes, or until the ravioli float to the top and are fully cooked. Stir occasionally to prevent sticking.

              Once the ravioli are cooked, season with salt and pepper to taste.

                Fold in the fresh spinach and let it wilt for about 2 minutes.
