3-4 lbs pork shoulder, bone-in

2 cups apple cider (non-alcoholic)

1 large onion, sliced

4 cloves garlic, minced

2 tablespoons brown sugar

2 tablespoons apple cider vinegar

2 teaspoons ground cinnamon

1 teaspoon ground nutmeg

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon olive oil

2-3 apples (such as Granny Smith or Honeycrisp), cored and sliced

Fresh rosemary sprigs for garnish

Instructions
 

Preparation: Begin by trimming any excess fat from the pork shoulder. Pat dry with paper towels, and season the meat all over with salt, pepper, cinnamon, and nutmeg.

    Sear the Meat: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork shoulder and sear on all sides until browned (about 4-5 minutes per side). Transfer the seared pork shoulder to a slow cooker.

      Create the Sauce: In the same skillet, reduce the heat to medium and add the sliced onions. Sauté until they begin to soften (about 3-4 minutes). Add the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: In a bowl, mix the apple cider, apple cider vinegar, and brown sugar. Pour this mixture into the skillet along with the sautéed onions and garlic, scraping up any browned bits from the bottom of the pan.

          Slow Cook: Pour the apple and onion mixture over the pork shoulder in the slow cooker. Add the sliced apples and cover the slow cooker with the lid. Cook on low for 8-10 hours or on high for 4-5 hours, until the pork is tender and easily shreds with a fork.

            Finishing Touches: Once cooked, carefully remove the pork shoulder from the slow cooker and let it rest for 10-15 minutes before shredding. You can also return the shredded pork to the slow cooker to soak in some of the juices for added flavor.

              Serve: Serve the slow-cooked pork shoulder with the apples and onions, spooning the apple cider sauce over the top.
