1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup smoked sausage, sliced (such as Andouille)

1 medium onion, chopped

1 bell pepper, chopped (red or green)

2 celery stalks, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juices

1 cup long-grain white rice

4 cups chicken broth

2 teaspoons Cajun seasoning (or more to taste)

1 teaspoon dried thyme

1 teaspoon paprika

1 bay leaf

Salt and pepper to taste

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken pieces with salt, pepper, and half of the Cajun seasoning. Set aside.

    Layering Ingredients: In the slow cooker, layer the chopped onion, bell pepper, celery, garlic, smoked sausage, and the seasoned chicken.

      Add Rice and Liquids: Pour in the diced tomatoes (including juices), long-grain rice, chicken broth, thyme, paprika, remaining Cajun seasoning, and bay leaf. Stir gently to combine all ingredients without disturbing the rice too much.

        Slow Cook: Cover the slow cooker and set it on low for 6 to 7 hours or high for 3 to 4 hours, until the chicken is fully cooked and the rice is tender.

          Add Peas (Optional): In the last 30 minutes of cooking, stir in the frozen peas if using. This will add a pop of color and extra nutrition.

            Final Touches: Once cooked, remove the bay leaf, and give it a good stir. Taste and adjust seasoning with more salt, pepper, or Cajun seasoning as needed.
