2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons garam masala

1 tablespoon ground cumin

1 tablespoon ground coriander

1 teaspoon turmeric

1 teaspoon chili powder

1 (15 oz) can tomato sauce

1 (15 oz) can coconut milk

2 tablespoons plain yogurt (optional for creaminess)

Salt to taste

Fresh cilantro, chopped (for garnish)

Cooked basmati rice or naan bread (for serving)

Instructions
 

Prepare the Chicken: Place the cut chicken thighs into the slow cooker.

    Sauté the Aromatics: In a hot pan, lightly sauté the chopped onion in a teaspoon of olive oil until translucent, about 5 minutes. Add the minced garlic and grated ginger; cook for an additional 2 minutes until fragrant. Transfer this mixture to the slow cooker.
