1.5 lbs beef stew meat, cut into 1-inch pieces

1 lb baby potatoes, halved

6 cloves garlic, minced

1/2 cup unsalted butter, melted

1 large onion, sliced

2 tsp dried thyme

2 tsp dried rosemary

1 tsp paprika

Salt and pepper to taste

1/4 cup beef broth

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Ingredients: In a large bowl, season the beef stew meat with salt, pepper, thyme, rosemary, and paprika. Toss until evenly coated.

    Sauté the Onions: In a skillet over medium heat, melt 2 tablespoons of butter. Add the sliced onion and cook for about 5 minutes until golden and fragrant. Remove from heat.

      Layer in Slow Cooker: Place the seasoned beef bites at the bottom of the slow cooker. Add the halved baby potatoes over the meat, followed by the sautéed onions.

        Mix the Garlic Butter: In a separate bowl, combine the melted butter with the minced garlic. Stir well to combine.

          Add to Slow Cooker: Pour the garlic butter mixture evenly over the beef and potatoes. Then splash in the beef broth for extra moisture.

            Cook: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, until the beef is tender and potatoes are cooked through.
