Ingredients

1.5 lbs beef stew meat, cut into bite-sized pieces

1 lb baby potatoes, halved

1/4 cup unsalted butter

4 cloves garlic, minced

1 medium onion, diced

1 cup beef broth

2 tablespoons Worcestershire sauce

2 teaspoons dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prep the Beef: Season the beef stew meat with salt and pepper. In a skillet over medium heat, melt 1 tablespoon of butter and sear the beef bites for 2-3 minutes until browned on all sides. Transfer the beef to the slow cooker.

Sauté Aromatics: In the same skillet, add the remaining butter. Sauté the diced onion and garlic for about 2 minutes until fragrant and softened.

Combine Ingredients: Add the sautéed onions and garlic to the slow cooker along with the halved baby potatoes, beef broth, Worcestershire sauce, dried oregano, and thyme. Stir gently to combine everything.

Slow Cook: Cover the slow cooker and cook on low for 6–8 hours or on high for 3–4 hours until the beef is tender and the potatoes are cooked through.

Final Touch: Once cooked, check for seasoning and adjust with more salt and pepper if necessary. Serve the beef bites and potatoes hot, garnished with fresh parsley.

Enjoy: Pair this hearty dish with crusty bread or a fresh salad for a complete meal!
