2 pounds beef chuck roast, cut into bite-sized pieces

1 pound baby potatoes, halved

1 stick (1/2 cup) unsalted butter

6 cloves garlic, minced

1 onion, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons Worcestershire sauce

1 cup beef broth

Fresh parsley, chopped (for garnish)

Prepare the Beef: Season the beef bites with salt, pepper, paprika, thyme, and rosemary. Toss to coat evenly.

    Sear the Beef (Optional): In a skillet over medium-high heat, melt 2 tablespoons of butter. Add the beef bites in batches and sear until browned on all sides. Transfer to the slow cooker.

      Layer the Ingredients: Add the halved baby potatoes and diced onion over the beef in the slow cooker.

        Make the Sauce: In a small saucepan over low heat, melt the remaining butter and add the minced garlic, cooking until fragrant (about 1-2 minutes). Remove from heat and stir in Worcestershire sauce and beef broth.
