6 medium potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

2 cups milk

1 pound smoked sausages (like kielbasa or bratwurst), sliced

1 teaspoon dried thyme

1 teaspoon paprika

1 tablespoon Dijon mustard

Salt and pepper to taste

1 cup heavy cream

Fresh chives, chopped (for garnish)

Instructions

In your slow cooker, add the diced potatoes, chopped onion, and minced garlic.

Pour the vegetable broth over the vegetables and stir to combine.

Add the sliced smoked sausages, dried thyme, paprika, and Dijon mustard. Season generously with salt and pepper.

Set the slow cooker to low and cook for 6-8 hours, or until the potatoes are tender.

About 30 minutes before serving, stir in the milk and heavy cream to give the soup a creamy texture.

            Adjust seasoning if necessary.

Before serving, blend the soup slightly with an immersion blender for a creamier consistency, or leave it chunky as preferred.

Serve hot, topped with fresh chives for garnish.
