Ingredients

1 pound kielbasa, sliced into thick rounds

4 medium russet potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

1 cup chicken broth

1 tablespoon Dijon mustard

1 tablespoon olive oil

2 teaspoons dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup frozen peas

Fresh parsley, for garnish

Instructions

In a large skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and cook for an additional 1 minute until fragrant, then remove from heat.

In the slow cooker, combine the diced potatoes, sautéed onions, and garlic.

Pour in the chicken broth, then add the sliced kielbasa on top.

In a small bowl, mix the Dijon mustard, thyme, smoked paprika, salt, and pepper. Drizzle this mixture over the ingredients in the slow cooker, ensuring everything is well coated.

Cover and cook on low for 6-8 hours, or high for 3-4 hours, until the potatoes are tender and the kielbasa is heated through.

About 30 minutes before serving, stir in the frozen peas to the slow cooker to heat through.

Once cooked, taste and adjust seasoning if necessary.
