Slow Cooker Shredded Beef Tacos

2 lbs beef chuck roast

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup beef broth

1 medium onion, chopped

3 cloves garlic, minced

1 jalapeño, diced (seeds removed for less heat)

1 can (14 oz) diced tomatoes with green chilies

12 small corn tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Beef: Pat the beef chuck roast dry with paper towels and season all sides generously with salt, black pepper, chili powder, cumin, garlic powder, and onion powder.

    Sear the Beef (Optional): In a skillet over medium-high heat, sear the seasoned beef roast for about 3-4 minutes on each side until nicely browned. This adds extra flavor but can be skipped if you're short on time.

      Load the Slow Cooker: Place the chopped onion, minced garlic, diced jalapeño, and diced tomatoes with green chilies in the bottom of the slow cooker. Place the beef roast on top.

        Add Broth: Pour the beef broth over the top, ensuring the beef is mostly submerged in the liquid.

          Cook the Beef: Cover the slow cooker and set it to low heat. Allow it to cook for 8 hours or on high heat for about 4 hours until the meat is tender and shreds easily with a fork.

            Shred the Beef: Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix it with the juices, allowing it to soak up the flavor for an additional 30 minutes on low.

              Prepare the Tortillas: While the beef is soaking, warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.

                Assemble the Tacos: To serve, fill each warmed tortilla with generous amounts of the shredded beef. Garnish with fresh cilantro and a squeeze of lime juice.
