Ingredients

8 oz fusilli pasta

4 oz smoked salmon, chopped

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/2 cup frozen peas, thawed

1/4 cup capers, rinsed and drained

1/4 cup fresh dill, chopped (or 2 tsp dried dill)

1/2 cup cream cheese, softened

1/4 cup Greek yogurt

2 tbsp lemon juice

1 tbsp Dijon mustard

Salt and pepper, to taste

Olive oil, for drizzling

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Dressing: In a mixing bowl, combine the softened cream cheese and Greek yogurt. Whisk until smooth. Add the lemon juice, Dijon mustard, salt, and pepper. Mix well until combined and creamy.

Combine Ingredients: In a large mixing bowl, combine the cooked pasta, chopped smoked salmon, cherry tomatoes, diced cucumber, sliced red onion, thawed peas, capers, and fresh dill. Gently toss to evenly distribute the ingredients.

Add Dressing: Pour the prepared dressing over the pasta salad. Toss gently until every component is well coated in the creamy dressing.

Chill and Serve: Cover the pasta salad with plastic wrap and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Before serving, give it a quick stir, drizzle with olive oil, and adjust seasoning with salt and pepper if needed.

Garnish (Optional): For extra freshness, sprinkle additional dill or a few capers on top before serving.
