12 oz fettuccine pasta

2 tablespoons olive oil

1 lb smoked sausage, sliced (like Andouille or Kielbasa)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup heavy cream

1 cup shredded Parmesan cheese

2 teaspoons Cajun seasoning

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced smoked sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove the sausage from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add diced onion, minced garlic, and sliced bell peppers. Sauté until the vegetables are softened and fragrant, about 5-6 minutes.

        Make the Alfredo Sauce: Reduce heat to low and pour in the heavy cream. Stir in the Parmesan cheese, Cajun seasoning, smoked paprika, and the reserved pasta water a little at a time until you have a creamy consistency. Season with salt and pepper to taste.

          Combine Everything: Add the cooked fettuccine and browned sausage back to the skillet. Toss everything gently to combine and heat through, allowing the pasta to absorb the flavors for another 2-3 minutes.
