Instructions
Preheat your oven to 400°F (200°C).
Pat the chickpeas dry with a clean kitchen towel or paper towels. Removing excess moisture will help them crisp up in the oven.
In a mixing bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, cumin, cayenne pepper (if using), and a pinch of salt and pepper. Mix well.
Add the dried chickpeas to the bowl and toss until they are evenly coated in the spice mixture.
Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through to ensure even cooking, until the chickpeas are golden and crispy.
Once done, remove from the oven and let them cool for a few minutes. Taste and adjust seasoning if needed.
Garnish with freshly chopped parsley before serving.
