1 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

¾ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup chocolate chips (milk or semi-sweet)

1 cup mini marshmallows

½ cup crushed graham crackers (plus extra for topping)

12 large marshmallows, halved (for topping)

Optional: chocolate drizzle for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with cupcake liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined. Be careful not to overmix.

            Add Chocolate and Graham Crackers: Fold in the chocolate chips and crushed graham crackers.

              Shape the Cookie Cups: Use approximately 1 tablespoon of dough for each muffin cup. Press the dough into the bottom and up the sides of each muffin tin cup, creating a shallow well in the center.

                Bake: Bake in the preheated oven for 10-12 minutes until the edges are a golden brown. Make sure the centers are slightly underbaked as they will set while cooling.

                  Add Marshmallows: Remove the cookie cups from the oven, and immediately add mini marshmallows into each cup, gently pressing them down. Return to the oven for an additional 2-3 minutes, until the marshmallows puff up slightly.

                    Top with Halved Marshmallows: Remove again and place a halved large marshmallow on top of each cookie cup. Return to the oven for 1-2 minutes until the marshmallows are gooey.

                      Cool and Garnish: Let the cookie cups cool in the muffin tin for about 5 minutes, then carefully transfer them to a wire rack to cool completely. Sprinkle crushed graham crackers on top if desired and drizzle chocolate for an extra touch.
