4 boneless, skinless chicken thighs

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 cup long-grain white rice

2 cups chicken broth

1 cup heavy cream

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 cup frozen peas

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare Chicken: Season the chicken thighs with salt, pepper, and paprika on both sides.

    Sear Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and sear for about 5 minutes on each side until golden brown. Remove and set aside.

      Sauté Vegetables: In the same skillet, add onions and bell pepper. Sauté for about 4 minutes until softened. Add garlic and cook for an additional minute until fragrant.

        Cook Rice: Stir in the rice, making sure to coat it well with the vegetable mixture. Pour in the chicken broth and bring to a boil.

          Simmer: Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes until the rice is cooked and the liquid is absorbed.

            Add Cream and Chicken: Stir in the heavy cream, thyme, and the frozen peas. Nestle the seared chicken thighs back into the skillet. Cover and cook for another 10-15 minutes, allowing the chicken to absorb the flavors and cook through.

              Serve: Remove from heat and let it sit for a few minutes. Garnish with freshly chopped parsley before serving.
