4 bone-in pork chops (1 inch thick)

Salt and pepper to taste

2 tablespoons olive oil

1 medium onion, sliced

2 cloves garlic, minced

8 ounces mushrooms, sliced (cremini or button)

1 cup chicken broth

1/2 cup heavy cream

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Instructions
 

Generously season both sides of the pork chops with salt and pepper.

    In a large skillet, heat olive oil over medium heat. Once hot, add the pork chops and sear for about 5-7 minutes on each side until golden brown. Remove the chops from the skillet and set aside.

      In the same skillet, add the sliced onions and sauté for about 3 minutes until they start to soften.

        Add the minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms release their moisture and start to brown, approximately 5 more minutes.

          Pour in the chicken broth, scraping the bottom of the pan to deglaze and capture all those delicious browned bits.

            Stir in the Worcestershire sauce, dried thyme, and paprika, mixing well.

              Reduce the heat to low and return the seared pork chops to the skillet, nestling them into the mushroom mixture.

                Cover and simmer for 15 minutes, or until the pork is cooked through (internal temperature of 145°F).

                  Once the pork is cooked, remove the chops again and set aside on a plate.

                    Stir the heavy cream into the skillet, mixing until combined and simmer on low for another 2-3 minutes until the sauce thickens slightly.

                      Return the pork chops to the skillet one last time, spooning the creamy sauce over them.

                        Garnish with chopped parsley before serving.
