1 box (15.25 oz) strawberry cake mix

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1/4 cup all-purpose flour

1/2 cup powdered sugar (for dusting)

1 cup cream cheese, softened

1/4 cup strawberry jam

1 teaspoon milk (optional, for thinning filling)

Sprinkles (optional, for decoration)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Make the Cookie Dough: In a large mixing bowl, combine the softened butter, strawberry cake mix, and eggs. Mix until well blended. If the dough is too sticky, gradually add the all-purpose flour until it’s manageable.

      Form Cookies: Using a cookie scoop or tablespoon, drop equal portions of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. Slightly flatten each dough ball with your palm.

        Bake: Bake in the preheated oven for about 10-12 minutes, or until the edges are set and the centers are soft (they will firm up as they cool). Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

          Prepare the Filling: In a medium bowl, beat the softened cream cheese until smooth. Stir in the strawberry jam and mix until combined. If the filling is too thick, you can add a teaspoon of milk to reach the desired consistency.

            Assemble the Sandwich Cookies: Once the cookies are completely cool, spread a generous amount of strawberry cream cheese filling on the flat side of one cookie and top it with another cookie, flat side down to create a sandwich.
