2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, cold and cubed

¾ cup buttermilk (add more if needed)

1 tablespoon honey (optional for a hint of sweetness)

Instructions
 

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Using a pastry cutter or your fingertips, cut the cold cubed butter into the flour mixture until it resembles coarse crumbs with pea-sized lumps.

        Create a well in the center of the dry ingredients and pour in the buttermilk and honey, if using. Stir gently with a wooden spoon until just combined, being careful not to overmix. The dough should be slightly sticky.

          Turn the dough onto a lightly floured surface. Knead gently just a few times (about 5-6 times) until it comes together. Pat the dough into a rectangle about 1 inch thick.

            Using a floured biscuit cutter (or a glass), cut out biscuits and place them onto the prepared baking sheet. Gather and re-pat any leftover dough to cut more biscuits.
