2 cups fresh corn kernels (or 1 can of corn, drained)

1 cup whole milk

1 cup heavy cream

3 large eggs

1/2 cup granulated sugar

1/2 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

4 tablespoons unsalted butter, melted

1/2 cup shredded cheddar cheese (optional)

Fresh chives for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the fresh corn kernels, whole milk, and heavy cream. Use a blender to create a smooth puree, and then set aside.

      In another bowl, whisk together the eggs, granulated sugar, cornmeal, baking powder, salt, and black pepper until smooth.

        Gradually add the corn puree to the egg mixture, stirring continuously to combine.

          Stir in the melted butter until well incorporated. If you're using shredded cheddar cheese, fold it into the mixture at this stage.

            Pour the corn pudding mixture into a greased 9x9-inch baking dish or a similar-sized oven-safe dish.

              Bake in the preheated oven for 45-55 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

                Once done, remove from the oven and let it cool for a few minutes before serving.
