8 oz penne pasta

2 chicken breasts, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup corn (fresh or frozen)

1 can (15 oz) black beans, rinsed and drained

1 cup cherry tomatoes, halved

1/2 cup cilantro, chopped

1/2 cup shredded cheese (cheddar or Mexican blend)

Salt and pepper to taste

1 lime, juiced

1 avocado, diced (for garnish)

Instructions
 

Cook the pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Season the chicken: In a bowl, combine diced chicken with chili powder, cumin, paprika, salt, and pepper. Mix well to coat the chicken evenly.

      Sauté the chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.

        Cook the veggies: In the same skillet, add sliced bell peppers and corn. Sauté for 4-5 minutes until they are tender.

          Combine the ingredients: Return the cooked chicken to the skillet. Add the black beans, cherry tomatoes, and cooked pasta. Stir well to combine all ingredients.

            Add flavor: Squeeze lime juice over the pasta mixture and sprinkle with chopped cilantro. Toss everything together until well mixed.

              Top with cheese: Remove from heat and sprinkle shredded cheese on top. Cover the skillet for a couple of minutes to let the cheese melt.

                Serve: Plate the pasta and garnish with diced avocado on top.
