400g spaghetti

2 large lemons (zest and juice)

1/4 cup extra-virgin olive oil

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup fresh basil, finely chopped

Salt and pepper to taste

Lemon slices, for garnish

Instructions
 

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

    In a large skillet over medium heat, combine the olive oil and minced garlic. Sauté for about 1-2 minutes until the garlic is fragrant, being careful not to burn it.

      Add the red pepper flakes to the skillet, stirring for an additional 30 seconds.

        Zest the two lemons directly into the skillet, then squeeze in the juice of both lemons. Stir to combine.

          Gradually add the drained spaghetti into the skillet, tossing it with the lemon and garlic mixture to coat.

            If the pasta seems dry, add reserved pasta water a little at a time until the desired consistency is reached.

              Mix in the grated Parmesan cheese (or nutritional yeast) and chopped basil, tossing everything together until well blended.

                Season with salt and pepper to taste, adjusting the flavors as necessary.

                  Plate the spaghetti into serving bowls, garnishing with fresh lemon slices and additional basil if desired.
