12 oz spaghetti

2 cups fresh spinach

1 cup sun-dried tomatoes (packed in oil, drained and chopped)

1 cup heavy cream

1/2 cup grated Parmesan cheese

3 cloves garlic (minced)

2 tablespoons olive oil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

    Prepare the Sauce: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant and golden. Be careful not to burn it.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for an additional 2-3 minutes, allowing them to soften.

        Create the Cream Sauce: Reduce heat to low and add the heavy cream to the skillet. Stir well to combine, and let it simmer for about 5 minutes, allowing the sauce to thicken slightly.

          Incorporate the Cheese: Gradually add grated Parmesan cheese to the sauce, stirring continuously until melted and creamy. You can adjust the thickness of the sauce by adding a bit of the reserved pasta water if needed.

            Add the Spinach: Toss in the fresh spinach and red pepper flakes, if using, cooking just until the spinach wilts—about 2 minutes.

              Combine with Spaghetti: Add the drained spaghetti to the skillet, tossing gently to coat the pasta with the sauce. Season with salt and pepper to taste.

                Serve: Divide the pasta into bowls, garnish with fresh basil leaves, and additional Parmesan if desired.
