In a medium bowl, toss the shrimp with Cajun seasoning, making sure they are evenly coated.
Heat olive oil in a large skillet over medium-high heat.
Once the oil is hot, add the seasoned shrimp in a single layer and cook for about 2-3 minutes until they start to turn pink.
Flip the shrimp and add the chopped onion and sliced bell pepper to the skillet. Sauté for an additional 3-4 minutes until the vegetables are softened.
Add minced garlic and halved cherry tomatoes to the skillet. Cook for another 2-3 minutes, stirring frequently until the garlic is fragrant and the tomatoes have softened.
Drizzle lemon juice over the shrimp and veggies. Season with salt and pepper to taste.
Remove from heat and garnish with fresh parsley before serving.
