Ingredients

1 pound thick-cut bacon

1/2 cup brown sugar

1 tablespoon cayenne pepper

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon maple syrup

1/2 teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top. This will allow the fat to drain off while the bacon cooks.

In a medium bowl, mix together brown sugar, cayenne pepper, smoked paprika, black pepper, and salt until well combined.

Add maple syrup and vanilla extract to the sugar mixture, stirring until smooth to create a thick paste.

Lay the bacon strips in a single layer on the wire rack. Using a spoon or a pastry brush, generously coat each strip with the spicy brown sugar mixture, ensuring the bacon is well covered.

Bake the bacon in the preheated oven for about 20-25 minutes, or until the bacon is crispy and the sugar has caramelized. Keep an eye on it towards the end to prevent burning.

Once cooked, remove the bacon from the oven and let it cool on the rack for about 5 minutes. The candy coating will harden as it cools.

Carefully transfer the candied bacon to a serving plate, or allow to cool completely and store in an airtight container for later enjoyment.
