4 small corn tortillas

4 large eggs

1/2 cup black beans, drained and rinsed

1/2 cup diced tomatoes

1/4 cup red onion, finely chopped

1 tablespoon chipotle pepper in adobo sauce, minced

1/2 avocado, sliced

1/4 cup crumbled feta cheese

Fresh cilantro, for garnish

Salt and pepper, to taste

Olive oil, for cooking

Instructions
 

Prepare the filling: In a small bowl, mix the black beans, diced tomatoes, red onion, and minced chipotle pepper. Season with salt and pepper to taste; set aside.
