1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup sugar

1 1/2 cups buttermilk

2 large eggs

1/4 cup unsalted butter, melted

1 cup corn kernels (fresh or canned)

2 jalapenos, finely chopped (seeds removed for less heat)

1/2 cup shredded cheddar cheese (optional)

1/4 cup chopped cilantro (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C) and grease an 8-inch square baking dish or cast-iron skillet.

    In a large bowl, mix together the cornmeal, all-purpose flour, baking powder, baking soda, salt, and sugar until well combined.

      In another bowl, whisk together the buttermilk, eggs, and melted butter until smooth.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing to keep the cornbread light.

          Fold in the corn kernels, chopped jalapenos, and shredded cheddar cheese (if using). Mix gently until evenly distributed.
