Rinse the pumpkin seeds in a colander under cold water to remove any pumpkin flesh. Pat them dry with a kitchen towel.
In a mixing bowl, combine the pumpkin seeds, olive oil, smoked paprika, cayenne pepper, garlic powder, salt, black pepper, and maple syrup (if using). Mix everything together until the seeds are well coated.
Spread the seasoned pumpkin seeds in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20-25 minutes, stirring every 10 minutes to ensure even cooking, until the seeds are golden brown and crunchy.
Remove the seeds from the oven and allow them to cool completely. They will become even crunchier as they cool.
Taste and adjust seasoning if necessary before serving.
