1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

½ teaspoon salt

½ pound fresh sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon sriracha (adjust to heat preference)

1 avocados, sliced

2 green onions, finely chopped

1 tablespoon sesame seeds

Oil for frying (vegetable or canola)

Seaweed sheets, cut into strips (for garnish)

Instructions
 

Cook the Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a pot with a lid. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice has rested, transfer it to a large bowl, gently fold in the vinegar mixture, and let it cool to room temperature.

      Prepare the Spicy Tuna: In another mixing bowl, combine the diced sushi-grade tuna, mayonnaise, sriracha, and half the chopped green onions. Stir until the tuna is well-coated.

        Shape the Crispy Rice: Once the rice has cooled, wet your hands (to prevent sticking) and form small rectangular patties, about 2 inches wide and ½-inch thick, using about 2 tablespoons of rice per patty.

          Fry the Rice Patties: In a large skillet, heat about ½ inch of oil over medium-high heat. Once the oil is hot, carefully place the rice patties in the skillet. Fry for about 2-3 minutes on each side until golden brown and crispy. Transfer the patties to a paper towel-lined plate to drain excess oil.

            Assemble the Dish: Top each crispy rice patty with a generous dollop of the spicy tuna mixture. Add a slice of avocado and sprinkle with sesame seeds and remaining green onions.
