Spinach and Artichoke Stuffed Bread

Ingredients
  

1 large loaf of crusty bread (such as ciabatta or sourdough)

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and diced

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Do not burn.

      Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in the diced artichoke hearts, red pepper flakes (if using), salt, and pepper. Cook for an additional 2 minutes, then remove from heat.

        In a mixing bowl, combine the softened cream cheese, mozzarella cheese, and half of the grated Parmesan cheese. Mix until well blended.

          Fold in the sautéed spinach and artichoke mixture into the cheese mixture until fully incorporated.

            Slice the loaf of bread in half lengthwise, creating a top and bottom. Hollow out the inside of both halves, leaving about 1/2 inch of bread on the sides.

              Fill both halves with the spinach and artichoke cheese mixture, spreading it evenly.

                Place the stuffed bread halves on a baking sheet. Sprinkle the remaining grated Parmesan cheese on top.

                  Bake in the preheated oven for about 20 minutes, or until the top is bubbly and golden brown.

                    Remove from the oven and let cool slightly. Slice into pieces and garnish with chopped parsley before serving.
