Ingredients

8 oz penne pasta

2 cups fresh spinach, chopped

1 cup cooked chicken breast, shredded

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup grated Parmesan cheese

1 cup mozzarella cheese, shredded

2 cloves garlic, minced

1/2 tsp onion powder

1/2 tsp garlic powder

Salt and pepper, to taste

1 tbsp olive oil

1/4 tsp red pepper flakes (optional)

Fresh basil, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce: In a large skillet over medium heat, add olive oil. Once heated, sauté the minced garlic until fragrant, about 1 minute.

Add Spinach and Chicken: Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in the shredded chicken and cook for an additional 2 minutes.

Mix in Cream Base: Lower the heat and mix in the softened cream cheese, sour cream, and grated Parmesan. Stir continuously until the cheeses are fully melted and combined, creating a creamy sauce.

Season the Mixture: Add onion powder, garlic powder, salt, pepper, and red pepper flakes (if using) to the sauce, mixing well to incorporate all the flavors.

Combine Pasta and Sauce: Add the cooked penne pasta to the skillet, tossing until the pasta is well-coated with the spinach and cheese sauce.

Add Mozzarella: Sprinkle the shredded mozzarella cheese over the pasta mixture. Cover the skillet with a lid for a couple of minutes until the mozzarella melts.

Serve: Remove from heat and garnish with fresh basil. Serve immediately while warm!
