Ingredients

1 lb flank steak, thinly sliced

1 tablespoon olive oil

1 onion, thinly sliced

1 bell pepper (any color), thinly sliced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon Worcestershire sauce

Salt and pepper to taste

4 sub rolls or hoagie buns

4 slices provolone cheese

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Marinate the Steak: In a bowl, combine the thinly sliced flank steak with olive oil, Worcestershire sauce, smoked paprika, salt, and pepper. Toss to coat and let it marinate for at least 15 minutes.

Cook the Vegetables: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the sliced onion and bell pepper, and sauté for 5-7 minutes until softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant. Remove the vegetables from the skillet and set aside.

Cook the Steak: In the same skillet, increase the heat to medium-high. Add the marinated steak and cook for about 3-4 minutes, stirring frequently, until the steak is browned and cooked to your desired doneness.

Combine: Return the sautéed vegetables to the skillet with the steak and mix well. Cook together for another 1-2 minutes to blend the flavors.

Assemble the Sandwich: Preheat your oven to 375°F (190°C). Split the sub rolls and place them on a baking sheet. Distribute the steak and vegetable mixture evenly among the rolls. Top each sandwich with a slice of provolone cheese.

Melt the Cheese: Bake in the oven for about 5-7 minutes, or until the cheese is melted and bubbly.

Serve: Remove the sandwiches from the oven, and if desired, sprinkle with fresh chopped parsley for garnish. Serve immediately.
