Ingredients
  

2 ribeye steaks (about 1 inch thick)

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and freshly ground pepper to taste

4 large russet potatoes, cut into thin fries

1 tablespoon cornstarch

3 tablespoons sunflower oil (for frying)

Optional garnish: fresh parsley, chopped

Instructions
 

Prepare the Fries:

    - In a large bowl, soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry with kitchen towels.

      Coat the Fries:

        - Toss the dried fries with cornstarch, ensuring they're evenly coated. This will help achieve a crispy texture when fried.

          Make the Steak Marinade:

            - In a small bowl, mix together olive oil, minced garlic, chopped rosemary, and chopped thyme. Season with salt and pepper.

              Marinate the Steaks:

                - Rub the herb mixture evenly over both sides of the ribeye steaks. Let them sit at room temperature for 30 minutes while the fries soak.

                  Fry the Potatoes:

                    - Heat sunflower oil in a large pot over medium-high heat. Once hot, carefully add the fries in batches. Fry for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.

                      Cook the Steaks:

                        - In a cast-iron skillet or grill pan over medium-high heat, add a little olive oil. Once hot, place the marinated steaks into the skillet. Cook for about 4-5 minutes on each side for medium-rare, depending on the thickness of the steak. Use a meat thermometer for precision (135°F for medium-rare).

                          Rest the Steak:

                            - Remove the cooked steaks from the heat and let them rest for 5-10 minutes to allow the juices to redistribute.

                              Serve:

                                - Slice the steak against the grain and serve alongside the crispy fries. Garnish with chopped parsley for a fresh touch.
