1 lb flank steak, sliced thinly against the grain

1 cup spinach, fresh

1/2 cup sun-dried tomatoes, chopped

1 cup mozzarella cheese, shredded

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Toothpicks, for securing

Instructions
 

Preheat your oven to 375°F (190°C).

    Place the flank steak slices between two sheets of plastic wrap and gently pound them with a meat mallet to an even thickness, about 1/4 inch thick.

      In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

        Add the fresh spinach and sun-dried tomatoes to the skillet. Sauté for another 2-3 minutes until the spinach is wilted.

          Lay the prepared steak slices flat on a clean surface. Season with salt and pepper. Spread a layer of the spinach and sun-dried tomato mixture over each steak slice, leaving a bit of space around the edges.

            Sprinkle the shredded mozzarella cheese evenly over the filling.

              Starting from one end, carefully roll each steak slice tightly into a pinwheel. Secure the end with a toothpick.

                Place the pinwheels on a baking sheet lined with parchment paper, and repeat with the remaining steak slices.

                  Bake in the preheated oven for about 20-25 minutes, or until the steak is cooked to your desired level of doneness and the cheese is melted.

                    Once done, remove from the oven and let them rest for a few minutes before removing the toothpicks.
