1 lb flank steak

4 whole wheat sandwich rolls

1 cup baby arugula

1 red bell pepper, sliced

1 medium red onion, thinly sliced

1 tablespoon olive oil

Salt and pepper to taste

For the Garlic Aioli:

1/2 cup mayonnaise

2 garlic cloves, minced

1 tablespoon lemon juice

Salt and pepper to taste

Prepare the Garlic Aioli: In a small bowl, combine mayonnaise, minced garlic, lemon juice, salt, and pepper. Mix well until smooth. Adjust seasoning to taste and set aside.

    Marinate the Steak: Rub the flank steak with olive oil, salt, and pepper. Let it rest for about 15 minutes at room temperature to absorb the flavors.

      Cook the Steak: Preheat a grill or a skillet over medium-high heat. Cook the flank steak for about 5-7 minutes on each side for medium-rare, depending on thickness. Remove from heat and let it rest for 5 minutes before slicing.

        Prepare the Vegetables: In the same skillet or grill where the steak was cooked, sauté the sliced red bell pepper and red onion for about 3-4 minutes until they are slightly tender. Season with a pinch of salt and pepper.

          Slice the Steak: Thinly slice the flank steak against the grain to ensure tenderness.

            Assemble the Sandwiches: Cut the whole wheat sandwich rolls in half and spread a generous layer of garlic aioli on both sides. Layer arugula on the bottom half, followed by slices of steak, sautéed bell pepper, and red onion. Top with the other half of the roll.

              Serve: Cut the sandwiches in half and serve immediately with extra garlic aioli on the side for dipping.
