To create the perfect sizzling steak tacos, it’s essential to start with the right ingredients. The foundation of this dish is, of course, the steak. Flank steak is the preferred cut for these tacos, and for good reason. Known for its rich flavor and tenderness when cooked properly, flank steak is a lean cut that absorbs marinades beautifully, making it ideal for taco fillings. Its fibrous texture allows for a satisfying chew, which complements the fresh toppings that will accompany it.

Ingredients

1 lb flank steak

2 tablespoons olive oil

2 tablespoons lime juice

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

Salt and pepper to taste

8 small corn tortillas

1 cup diced tomatoes

1 avocado, sliced

½ cup red onion, finely diced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

In a bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper to create a marinade.

Place the flank steak in the marinade, ensuring it's evenly coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.

Preheat your grill or stovetop skillet over medium-high heat.

Remove the steak from the marinade and let any excess drip off. Grill the steak for about 5-7 minutes per side for medium-rare, or until desired doneness.

Once done, remove the steak from the heat and let it rest for 5 minutes before slicing it thinly against the grain.

While the steak is resting, warm the corn tortillas on the grill or in a dry skillet until soft and pliable.

To assemble the tacos, lay a few slices of steak on each tortilla. Top with diced tomatoes, avocado slices, and red onion.

Garnish with fresh cilantro and serve with lime wedges on the side. Enjoy your delicious steak tacos!
