Ingredients

2 ribeye steaks (about 1 inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

1 tablespoon butter

8 ounces shrimp, peeled and deveined

1 tablespoon Cajun seasoning

1 cup heavy cream

1/2 cup diced tomatoes (fresh or canned)

1/2 cup diced bell pepper (red or green)

1/4 cup chopped green onions

1 tablespoon minced garlic

Fresh parsley, for garnish

Instructions

Season the Steaks: Liberally sprinkle both sides of the ribeye steaks with salt and black pepper. Let them sit at room temperature for about 20 minutes.

Cook the Steaks: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned ribeye steaks and sear them for about 4–5 minutes on each side for medium-rare, or longer to reach your desired doneness. Once cooked, remove the steaks from the skillet and let them rest on a plate, covered loosely with aluminum foil.

Prepare the Cajun Shrimp Sauce: In the same skillet, melt 1 tablespoon of butter over medium heat. Add the minced garlic and diced bell pepper, sautéing until the bell pepper becomes tender, about 2 minutes.

Cook the Shrimp: Stir in the shrimp and Cajun seasoning to the skillet. Cook until the shrimp turn pink and opaque, about 2–3 minutes.

Make it Creamy: Add the heavy cream and diced tomatoes to the skillet. Bring the mixture to a gentle simmer, letting it cook for an additional 3–4 minutes or until the sauce thickens slightly.

Finish with Green Onions: Stir in the chopped green onions and mix well. Adjust the seasoning with salt and pepper to taste.

Serve: Slice the rested ribeye steaks and place them on plates. Generously spoon the creamy Cajun shrimp sauce over the steaks.
