1.5 lbs (680g) chicken thighs, boneless and skinless

1/2 cup (120ml) apricot jam

1/4 cup (60ml) soy sauce

2 tablespoons rice vinegar

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon black pepper

1/4 teaspoon red chili flakes (optional for heat)

1 tablespoon vegetable oil

Salt to taste

Fresh cilantro or parsley for garnish

Cooked jasmine rice or quinoa, for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine apricot jam, soy sauce, rice vinegar, Dijon mustard, minced garlic, grated ginger, black pepper, and red chili flakes. Mix well until smooth. Add the chicken thighs, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Chicken: In a large oven-safe skillet, heat the vegetable oil over medium-high heat. Once hot, add the marinated chicken thighs without the marinade. Sear for about 2-3 minutes on each side until the chicken is golden brown.

        Add the Marinade: Once the chicken is nicely seared, pour the reserved marinade over the chicken in the skillet. Use a spatula to toss the chicken in the sauce to coat it evenly.

          Bake the Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C). Baste the chicken with the sauce halfway through for added flavor.

            Serve: Once done, remove the chicken from the oven and let it rest for a few minutes. Drizzle the sticky sauce from the skillet over the chicken, garnish with fresh cilantro or parsley, and adjust seasoning with salt if needed.
