1 lb (450g) boneless, skinless chicken thighs

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon sesame oil

1 tablespoon sriracha (optional, for heat)

For the Rice:

1 cup jasmine rice

2 cups low-sodium chicken broth

1 teaspoon sesame oil

Salt, to taste

Toppings:

1/4 cup sliced green onions

1/4 cup chopped cilantro

1/4 cup pickled vegetables (optional)

Sesame seeds, for garnish

Marinate the Chicken: In a bowl, combine soy sauce, honey, apple cider vinegar, minced garlic, grated ginger, sesame oil, and sriracha. Add chicken thighs, ensuring they are well-coated. Cover and marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine rinsed rice, chicken broth, sesame oil, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

      Cook the Chicken: Heat a large skillet or grill pan over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and sear the chicken for about 5-6 minutes on each side or until cooked through and a nice glaze forms. Add the reserved marinade to the skillet and simmer for another 2-3 minutes until thickened slightly.

        Assemble the Bowls: Fluff the cooked rice with a fork and divide it among serving bowls. Slice the sticky chicken and place it on top of the rice. Drizzle with the thickened sauce from the pan.
