Ingredients
  

1/4 cup soy sauce (low sodium preferred)

2 tablespoons rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 inch fresh ginger, grated

3 cloves garlic, minced

1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

1/2 teaspoon crushed red pepper flakes (adjust to taste)

2 green onions, finely chopped

Optional: 1 tablespoon fish sauce for umami (omit for vegetarian)

Instructions
 

In a medium bowl, whisk together the soy sauce, rice vinegar, honey (or maple syrup), and sesame oil until well combined.

    Add the grated ginger and minced garlic to the mixture, stirring to incorporate all the flavors.

      If using, stir in the fish sauce for an added depth of flavor.

        Incorporate the crushed red pepper flakes into the sauce to provide some heat, adjusting based on your spice tolerance.

          To thicken the sauce, add the cornstarch slurry into the bowl and whisk until fully blended.

            Taste the sauce and adjust the sweetness or saltiness by adding more honey or soy sauce if needed.

              Finally, fold in the finely chopped green onions for freshness.
