Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
In a mixing bowl, combine the mashed bananas and melted coconut oil until smooth.
Stir in the brown sugar and granulated sugar, mixing well until incorporated.
Add the eggs and vanilla extract, and whisk until the mixture is light and fluffy.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
Gently fold in the sliced strawberries and nuts, if you’re using them, until evenly distributed.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
