1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy whipping cream

1 cup fresh strawberries, diced

1/4 cup granola (for crunch topping)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Base: In a medium bowl, mix the graham cracker crumbs with melted butter until well combined. Press the mixture firmly into the bottom of a silicone mini muffin pan to create a crust layer. Use about a tablespoon per cup. Place the tray in the refrigerator to set while you prepare the filling.

    Make the Cheesecake Filling: In another bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and continue to mix until well combined.

      Whip the Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until light and fluffy. Be careful not to deflate the whipped cream.

        Add Strawberries: Carefully fold in the diced fresh strawberries into the cheesecake mixture, reserving a few for topping the bites.

          Assemble the Bites: Spoon the cheesecake filling over the chilled graham cracker crust in the mini muffin pan, filling each cup to the top. Press down gently to pack the filling.

            Chill: Place the tray back in the refrigerator for at least 2 hours to allow the cheesecake bites to firm up.

              Serve: Once chilled, remove the bites from the muffin pan. Top each cheesecake bite with a dollop of reserved diced strawberries and a sprinkle of granola for crunch.
