In a medium bowl, combine the rolled oats, milk, Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon. Stir well until all ingredients are fully mixed.
In a small bowl, mix the softened cream cheese with a splash of milk (about a tablespoon) until smooth and creamy. Set aside.
Layer half of the oat mixture into the bottom of a mason jar or container.
Add half of the sliced strawberries on top of the oats.
Spoon in the cream cheese mixture, spreading it evenly over the strawberries.
Add the remaining oat mixture over the cream cheese layer.
Top with the rest of the sliced strawberries and sprinkle with graham cracker crumbs for that cheesecake crunch.
Seal the jar/container and refrigerate for at least 4 hours or overnight.
Notes
Serve the overnight oats in the jar, with a fresh strawberry on the side and an extra sprinkle of graham cracker crumbs on top for an appealing look.
