Ingredients

1 cup graham cracker crumbs

2 tablespoons sugar

1/4 cup unsalted butter, melted

8 ounces cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup whipped cream

1 cup fresh strawberries, diced

1 tablespoon lemon juice

6 small flour tortillas

1/4 cup chocolate chips (optional)

Instructions

In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. This will be the base for the taco shell.

Preheat your oven to 350°F (175°C). Line a muffin tin with foil to shape the tacos.

Press the graham cracker mixture into the bottom and up the sides of the muffin tin cups to form taco shells. Bake for 8-10 minutes until golden. Remove from the oven and let cool.

In another bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Gently fold in the whipped cream until fully combined, creating a light and airy cheesecake filling.

In a separate bowl, toss the diced strawberries with lemon juice to enhance their flavor and prevent browning.

Once the taco shells have cooled, fill each shell with a generous spoonful of the cheesecake filling.

Top the cheesecake filling with the tossed strawberries. If desired, sprinkle some chocolate chips on top for an extra touch of sweetness.

Serve immediately, or refrigerate for up to an hour for a cooler treat.

                    Prep Time: 20 minutes | Total Time: 45 minutes | Servings: 6
