1 cup fresh strawberries, hulled and chopped

1/2 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/3 cup powdered sugar (for dusting)

Optional: 1/2 cup white chocolate chips

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

      Beat in the egg and vanilla extract until well combined.

        In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.

          Gently fold in the chopped strawberries and optional white chocolate chips until evenly distributed. The dough will be soft and slightly sticky.

            Using a tablespoon, drop rounded spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the tops are set.

                Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
